Delicious Coconut Lamb
Our stay in Valledupar was beautiful. We were invited by a lovely family that we met in Palomino, and we discovered some typical dishes like the lamb cooked in coconut milk. A dish you have to try. The taste of the coconut and the tender lamb meat make this dish a real delight.
- 1 Kg Lamb Preferably the leg
- 2 Tomatoes
- 1 Onion
- 1 Entire Spring Onion
- 4 Garlic Cloves
- 1 Red Pepper
- 2 Bay leaves
- 1 Coconut
- Salt and pepper
Open the coconut and remove the inner part from the coconut
Grate the pieces of coconut and set aside a pinch of grated coconut. The rest put it in the blender, with lukewarm water til the coconut is covered, and liquefy.
Above a bowl, pour the contents of the blender into a strainer to remove the milk. Throw the excess of coconut.
Peel the tomatoes, and cut into thin slices. Same for the pepper.
Cut the onion in half then in very thin slices, and the spring onion in small pieces.
Chope the garlic cloves
In a pressure cooker, pour the coconut milk, add the pieces of lamb, the chopped vegetables, garlic, the bay leaves, and the seasoning to your liking.
Close the pressure cooker and let cook 45min on medium heat and enjoy !!
This dish can be served with Basmati Rice, Coconut Rice or tradicional fried plantain bananas.
