Delicious Coconut Lemonade: Recipe
Refreshing Coconut Lemonade
In Cartagena, always looking for something refreshing to drink, we discovered what would be one of our favorite drink so far from the colombian coast : coconut lemonade. The recipe is really easy and just need a little more work when using fresh coconuts.
We give you the secret...
- Enough lemons to fill a little cup
- 1 coco or 200ml of coconut milk
- Sugar as much as you like
- Mint for decoration
- Crushed ice
Open the coconut, take away the shell, and get the coconut pulp. Cut it in small pieces.
In the blender, place the coconut pieces and add 2 cups of lukewarm water until coconut gets completely covered.
Blend it. What you will get is a coconut kind of paste with coconut milk.
On top of a recipient, use the strainer to get the coconut milk from the coco paste. Press it to extract all the milk.
Squeeze the limes.
In the blender, add the coconut milk, and little by little lime juice (put the right amount to not have it bitter). Add as much sugar as you wish. Blend the whole liquid.
Once the preparation has the perfect combinatiom of sugar and lime, add the crushed iced and blend it.
Serve it directly with a little mint on top for decoration and extra taste. (In this example we could not find mint as we were in Riohoacha wich is a desertic area...)
